Job Description:Splendido Mare, A Belmond Hotel, part of the LVMH Group, is a charming guesthouse in the heart of the Portofino. Its celebrated restaurant, DaV Mare, embodies all the pleasures of piazzetta living through refined cuisine, curated in partnership with the 3-Michelin-star Cerea family. Awash with nautical spirit, our gem on the Italian Riviera celebrates the art of Ligurian living in its purest form.We are looking for a Head Sommelier to join our team.The ideal candidate is passionate about hospitality and comfortable with challenges. He/She is willing to provide authentic and luxury experiences, demonstrating care, confidence, curiosity and community.Reports to Head Sommelier.Main duties & responsibilities:
  • Fulfil the operations of the Food & Beverage outlet
  • Monitor all aspects of the customers' experience, from the restaurant layout before they arrive to the experience they receive during the service. Act to enhance a flawless service and anticipate Guests' needs
  • Establish and maintain good relationships with all Guests and handle requests and enquiries
  • Inventory and requisitions
  • Assist in monitoring stock levels and ordering replacement deliveries. Avoid any waste and capable to control beverage margins;
  • Contribute to the achievement of the economic targets
Requirements:Competencies required:
  • Sommelier Association membership degree appreciated (AIS or WSET)
  • Fluent in English and Italian
  • Previous professional experience within the same role in a luxury environment
  • Passion for service and ambition to grow professionally
